Polos (green jackfruit curry)


Here’s a recipe for Polos (Green Jackfruit Curry), a delicious Sri Lankan dish made from young green jackfruit. It's a hearty, flavorful, and mildly spiced curry.

Ingredients

  • 500g green jackfruit (cut into bite-sized cubes)
  • 1 medium onion (sliced)
  • 4-5 garlic cloves (finely chopped)
  • 1-inch piece of ginger (grated)
  • 2-3 green chilies (sliced)
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 1 sprig of curry leaves
  • 1 tbsp tamarind paste (or juice from 1 lemon-sized tamarind ball)
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 2 tsp roasted curry powder
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 1 cinnamon stick
  • 1 cup thick coconut milk
  • 1-2 tbsp oil
  • Salt to taste

Instructions

  1. Prepare the Jackfruit:

    • Clean and cut the young green jackfruit into bite-sized cubes. If using fresh jackfruit, be sure to oil your knife and hands as the sap can be sticky.
    • Boil the jackfruit pieces in salted water for about 15-20 minutes until slightly tender. Drain and set aside.
  2. Toast the Spices:

    • In a dry pan, lightly toast the cumin seeds, coriander seeds, and fennel seeds until fragrant. Let them cool, then grind into a fine powder. This enhances the flavor of the curry.
  3. Cook the Curry Base:

    • Heat the oil in a large pot over medium heat. Add mustard seeds, fenugreek seeds, and cinnamon stick, and sauté until the mustard seeds start popping.
    • Add sliced onions, curry leaves, green chilies, ginger, and garlic. Sauté until the onions are soft and golden.
  4. Add Spices:

    • Add the turmeric powder, chili powder, roasted curry powder, and the freshly ground spice mix. Stir well to coat the onions and release the flavors.
  5. Add Jackfruit:

    • Add the boiled jackfruit to the pot and mix it with the spices, allowing it to absorb the flavors for a few minutes.
  6. Tamarind and Coconut Milk:

    • Add the tamarind paste and salt, followed by the thick coconut milk. Stir gently to combine everything.
  7. Simmer:

    • Reduce the heat to low and let the curry simmer for 20-25 minutes, stirring occasionally, until the jackfruit is fully cooked and has absorbed all the flavors. The sauce should thicken slightly.
  8. Serve:

    • Once done, remove from heat and let the curry rest for a few minutes. Serve hot with rice, roti, or bread.
